As for the recipe:

Moist Chocolate Chip Banana Bread Recipe (Modifications in brackets)

1 1/2 cups flour (I use 1 cup whole wheat flour and a half cup of ground flax seed)

1 tsp baking soda

1/4 tsp salt

3/4 cup chocolate chips (I use 1 cup–be sure to mix the chocolate chips in with the dry ingredients to ensure they do not sink in pan when baking)

1/2 cup butter softened

1 1/2 cups sugar ( I use one cup sugar–and sometimes I use 3/4 cup of brown sugar instead)

2 eggs beaten (I substitute four egg whites)

1 cup mashed bananas (I use two really ripe bananas usually)

3 tbsp sour cream

Sift together the first three ingredients.  Then stir in chocolate chips and coat in dry mixture.  Mix the rest of the ingredients into dried items, pour into greased and floured loaf pan.  Bake at 350 degrees for 1 hour.  Be sure to insert toothpick to check that it is fully cooked.  Cool on rack. Suggested serving:  One warm slice of bread with peanut butter and one cold glass of milk.  YUM!

Hello world!

As a student, wife and  mother of two I have decided to chronicle my busy day-to-day adventures in my blog.

Now added to that list of action verbs will be “blogging.”

This new social medium intrigues me.  I look forward to sharing my new adventures and insight with you.
